This limited edition bottling of AULTMORE 18 Year Old is finished in second-fill Madeira casks. Influenced by succulent exotic fruit aromas and spice, the finish complements the malt’s heady, herbal tones. A burst of freshly mown grass accompanies sun ripened aromas of red cherry and blackberry with a twist of orange peel, caramel and a touch of dried spice to finish. As well as being interested in different finishing cask types for this collection Stephanie was also intrigued by the impact of second-fill casks versus first-fill casks. The second-fill casks which once held Madeira wine and then used for maturing whisky, are used to finish AULTMORE 18 Years Old. The casks give a distinctive influence on the finishing whisky which is not as dominant as from first-fill casks. With a lighter, ethereal whisky like AULTMORE, second-fill cask delicately compliment the whisky’s nuanced character.
