This limited edition bottling of AULTMORE 12 Year Old is finished in second-fill Oloroso casks. Replete with its characteristic floral and fruity notes, the finish delicately imbues the malt with sweetness and spice. It is elegant and delicate a fragrant array of floral meadows and summer fruits accompany soft creamy toffee notes with hints of cinnamon delicately lingering in the finish. As well as being interested in different finishing cask types for this collection Stephanie was also intrigued by the impact of second-fill casks versus first-fill casks. This is demonstrated in the collection’s 12- and 25-year-old expressions. These second-fill Oloroso casks which once held Oloroso sherry and then used for maturing whisky, have been used for a second time to finish AULTMORE 12 Years Old. The casks give a distinctive influence on the finishing whisky which is not as dominant as from first-fill casks. With a lighter, ethereal whisky like AULTMORE, second-fill cask delicately compliment the whisky’s nuanced character.
