Beginning its story in American oak ex-bourbon casks, the full-flavoured spirit mellowed with each passing year, its characteristically complex nature heightened by the Caithness coastal air. Rounded and deep, the spirit then found a new home in Spanish oak, taking on sweetness and spice, becoming richer and darker. A brief but intense adventure in casks which previously held heavily peated whisky provided a compelling final flourish for this powerful expression of the Maritime Malt.Colour: Polished copper Aroma: Spicy and sweet heart of vanilla, toffee and honey is balanced by a thin veil of warming wood smoke and oak embers. Bitter orange marmalade and notes of caramel apples soon follow, adding a touch of fruity, brighter tonality to this exquisitely complex dram. Taste: Rich in texture and intense in flavour, the palate opens up with strong chords of pralines and sultanas on a thick bed of deliciously warm, savoury smoke. Citrus strikes the top note with hints of vanilla lingering in the background.
