Charles MacLean, ‘World of Whiskies’ chief adviser, is “Scotland’s leading whisky expert” [The Times, Jan.2013].

He is the author of a dozen books about Scotch and was elected Master of the Quaich, the whisky industry’s highest honour.

1. Flavour

Flavour is a combination of smell and taste.
Much of the assessment and appreciation of whisky
is done with the nose, so it is essential that the glass you
use has a bowl (so the liquid can be swirled and warmed in the hand)
and a rim which narrows (so as to direct the aroma to your nose).

2. Appearance

The first stage of appreciation is to look at the colour of the liquid, which will range from pale gold to deep umber. The colour comes from the casks in which the spirit has been matured. If you like, you can then swirl the liquid and consider the droplets which slide down the glass, called ‘legs’. Slow, thick legs suggest the whisky will have a big texture; fast, thin legs indicate a lighter style.

3. Aroma

Swirl the liquid in the glass and sniff it. Your first impression is likely to be simply ‘whisky’, but sniff further. Does it have any physical effect – prickle, warming, cooling? Try to distinguish groups or layers of aroma: are there any cereal/malty notes? Fruity notes (fresh, dry, tinned, cooked, citric)? Floral notes? Peaty/smoky/medicinal notes? Woody notes (vanilla, oak)? Do any of these scents remind you of anything? Add a drop of water and try again.

4. Taste

‘Evaluation by mouth’ is usually done at reduced strength, after you’ve added water. Hold the liquid in your mouth for longer than usual and, first, assess its texture (smooth, creamy, acerbic, etc.), then note the distribution of primary tastes: sweet (front of tongue), sour/acidic, salty (sides of tongue), bitter/dry (back of tongue. ‘Smoky’ – not a primary taste – is also registered here). Note the length of finish (short, medium, long) and any after-taste.

5. Development

Set the glass aside, then return to it after 10 minutes and see how the aroma and taste have changed. Sit back and simply enjoy it without analysis!

A legendary selection

With traditions stretching back through the centuries, the line between fact and folklore has become blurred by the ages. The provenance of these, some of our finest selections, adds a layer of mystique to the expertise in layering of flavour.

Cragganmore 43 Year Old, 70cl

The oldest whisky ever directly released by the Cragganmore Distillery and the oldest single malt from the distillery. Only 474 bottles available.

Beautifully structured, with a soft, sweet nose. It shows off the dry distillery character to the full; with a compellingly intense palate that gradually dries in a clever interplay between oak and malt to a long,

warming finish that’s superbly subtle.The flat-topped spirit stills at Cragganmore are of a design unique in Scotland, which is believed to encourage reflux and so, to increase the complexity of the spirit.

Auchroisk 25 Year Old, 70cl

A limited edition, natural cask strength single malt from Auchroisk, an active distillery on Speyside, rarely seen as a single malt. Just 3,954 individually numbered bottles worldwide.

A fruity apéritif malt, at its best with a little water; enjoyable at the start of an evening and indeed at other times too. Gloriously fresh and fruity, with a light body and good structure; the initially clean nose gives little hint of the spicy flavours of fruit that follow.

Auchroisk distilled the original ‘THE SINGLETON’. Released in 1986, the 10 year old single malt was given a further two years maturation in ex-sherry casks – thought to be very first example of what is now a widespread practice.

Brora 38 Year Old, 70cl

A limited edition, natural cask strength single malt, from a closed distillery at Brora on the Sutherland coast. Only 2,984 individually numbered bottles worldwide.

A superb and well-balanced example of this outstanding single malt; robust, with breezy maritime notes on the nose, yet soon showing an easy charm, self-assured and approachable, retaining distillery character even at this advanced age with more smoke, ash and peat than recent expressions.

In the 1860s there was a gold-rush near the distillery in the Strath of Kildonan, Scotland’s very own Klondike. Gold is still found there and permits to pan for gold are still issued locally today.

Cambus 40 Year Old, 70cl

The oldest CAMBUS ever released by the original distillers. Distilled in 1975. Just 1,812 individually numbered bottles available worldwide.

Deceptively complex and fresh for its age, this is an incredibly well-integrated and harmonious (not to mention, exceedingly rare) 40 year-old single grain that is light yet sumptuous, fresh and clean; with a fine, relaxed finish, it makes an unusual and delicious apéritif.

A smooth 7 year-old CAMBUS Patent Still Scotch Grain Whisky was launched in 1906 using the unlikely advertising slogan “Not a headache in a gallon”.

Linkwood 37 Year Old, 70cl

A limited edition, natural cask strength single malt. Only the second Special Release bottling and the first for eight years.

Both elegant and stylish: the epitome of Speyside ‘finesse’. Displaying typical fresh fruit and floral characters in its slow desire to be approachable, the nose yet gives no hint to the wonderful elegance and complexity evident on the palate and in the finish of this sophisticated malt.

Demand for LINKWOOD has always outstripped supply, but this became so marked in the years leading up to 1971 that a new still house was built to run alongside the old. When this 37 year old was made the two were both producing, side by side.

Mannochmore 25 Year Old, 70cl

From a unique mix of first-fill ex-bourbon American Oak barrels, new American Oak barrels and new and ex-bodega European Oak butts. Just 3,954 individually numbered bottles available worldwide.

A highly competent and self assured digestif at natural strength, yet reveals more complex depths with water. Perfectly mature yet retaining its distillery character, with appetising, charred bitter-sweet pungency.

Very clear wort (the liquid extracted from the mashing process) and long fermentations, combined with high levels of vapour to copper contact during distillation, contribute to the clean, fruity character of MANNOCHMORE.

Celebrating travel heritage

The long history of Laphroaig

For 200 years a small team of dedicated islanders have worked at Laphroaig on the isle of Islay to create what is considered to be the most distinctive single malt in the world.

A naturally-occurring white sediment might be expected to appear in older, complex whiskies contained in each bottle of THE MASTER BLENDERS COLLECTION. The presence of the sediment – the crystallised form of calcium oxalate – is testament to a long-aged whisky.

The crystallised particles may disintegrate when the liquid is poured with care from a rested decanter. If the particles remain, please be assured that it is a harmless, natural substance that will not affect the taste or quality of the whisky.

Exclusive Heathrow Single Cask

Highland Park is made today with the same enduring belief and integrity, to the same exacting standards, as it has been since 1798. The established attitude at Highland Park is one of custodianship rather than management, of tradition rather than novelty.

In 1468 the Orkney island were given to the Scottish people, but the Viking legacy is still part of life on Orkney today.

Based in Copenhagen, Martin Markvardsen has been working in the whisky industry for almost a quarter of a century, with over 10 years working with Highland Park.

He was closely involved in the selection of potential casks from which Heathrow could choose from for this exclusive bottling.

In 2009, Martin was given a great honour when he was asked to be a “Keeper of the Quaich”; and he is also a “Master of Malt”, high accolades indeed.

Highland Park is one of only a handful of distilleries that still retains a traditional malting floor, turning each batch of malt by hand.

To malt the barley, they steep it in the mineral rich water from the Crantit spring. One of the fundamental flavours in Highland Park single malt whisky is the delicate, sweet, aromatic peat smoke, which has enhanced its unique character since 1798.

The Orkney Islands have an abundance of this sweet, heathery peat, which is around 4,000 years old and is carefully selected from Hobbister Moor.

Orkney is blessed with a wonderfully temperate climate. This is perfect for a long, cool maturation in traditional warehouses, delivering a distinctly Orcadian personality, with a smooth character and lingering, delicate smokiness

Glenmorangie Signet

A fusion of unique and rare elements. Made from chocolate malted barley, a technique only used by Glenmorangie.

The essence of the north


The Glenmorangie distillery lies in the far north of Scotland, in the Royal Burgh of Tain. The distillery uses Scottish grown barley that is lightly peated during malting, and water from its Tarlogie Springs - the natural spring that is owned by the distillery together with 650 surrounding acres to protect its purity. The water of Tarlogie Springs has filtered for nearly a century through lime and sandstone, and is unusually hard and rich in minerals.

Holding a PhD in Biochemistry, Dr Bill Lumsden combines his talent for both art and science and is renowned for his ground-breaking wood management techniques, experimentation with exceptional casks and utilisation of extra maturation to deliver outstanding whiskies.

He is regarded as a pioneer of innovation in the malt whisky industry and travels the world searching for the best oak casks that will complement Glenmorangie’s whiskies and impart unique characteristics all of their own.

Tradition re-invented


Distilling heritage around Loch Lomond can be traced back to 1814 when the first recorded whisky distillery was founded in Tarbet. The current Loch Lomond Distillery is one of the most innovative in the scotch whisky industry creating a range of single malts using more than one type of still. Each is a fine example of the distilling techniques employed at Loch Lomond Distillery resulting in a rich and unique Scotch Whisky range.

The artistry of nature

“Nature plays a key role in establishing the true quality of a great Single Malt Whisky”.

Water is fundamental: incredibly natural spring water comes from the Scottish Highlands and is an essential ingredient in Glen Grant.

The barley is soaked, then spread out and left to germinate. During this step, the barley breathes and is heated to become malted. Malted barley for Glen Grant has specific characteristics, dry, crispy, crumbly, and aromatic. The barley is then mashed with water to prepare it for distillation. Glen Grant uses a unique distillation process. Incredibly tall stills ensure only the lightest spirit and purifiers are used in both distillations. This was an invention of James “The Major” Grant. This ensures only the purest vapour is allowed to pass from the still to the condenser, and therefore creates a fresh, and light whisky.

Boulevardier Cocktail


60ml whisky
60ml Campari
60ml sweet vermouth
Ice
Orange slice, for garnish

Combine the whisky, Campari, and sweet vermouth
in a cocktail shaker and fill it halfway with ice.
Stir until the outside of the shaker is frosted, about
30 seconds.Strain into a chilled cocktail glass.
Garnish with the orange twist and serve.

Pear Fizz Cocktail

Muddle tarragon with 60ml whisky and 1 teaspoon brown sugar. Add 300ml pear juice and shake over ice. Strain into coupe glasses and top with prosecco. Garnish with a slice of pear and a sprig of tarragon.

Serves 2.

Chocolate Whisky Tart

220g shortbread biscuits,
1 tablespoon sugar,
1/2 teaspoon salt and
60g melted unsalted butter.

3/4 cup double cream,
1/3 cup whole milk,
250g dark chocolate,
1 large egg plus
1 large egg yolk,
1 tablespoon flour,
2 tablespoons whisky.

Preheat the oven to 150ºC. Crush the biscuits into crumbs, add the sugar and salt, and stir until combined. Pour the butter over the crumbs and combine. Press the mixture into a 9 inch tart dish and bake until it is just dry to the touch (about 12 minutes) and cool. Stir together the cream and milk over a medium-low heat. Bring the mixture to a simmer then remove from heat. Add the chopped chocolate and whisk until the mixture is smooth.

Cool to room temperature. Lightly beat the egg, egg yolk, flour, and whisky then add to the chocolate mix.

Pour the filling into the tart shell and bake for 20 to 25 minutes, cool for at least 15 minutes. Serve and enjoy!

Recipe to try at home


When you think of spicy rubs, char-grilling and punchy marinades, there is that intriguing flavour of smoke, spice and sweetness. Whiskies match this note for note, so are perfect to match with barbecue meats.

Marinate chicken drumsticks overnight in a mixture of ketchup, Sriracha hot sauce, honey, whiskey and a large minced garlic clove.

Add chopped peppers and grill. Turn occasionally and generously brush with the marinade each time, until chicken is well-browned and cooked through, around 15 minutes in total.

Serve with barbecued sweet corn on the cob, a salad and some crusty bread.
