Details

Balik Sjomga Nori is a salmon belly fillet that has been dressed – i.e. perfectly cut by hand – and marinated with sesame oil and wasabi, a condiment made from the base of the root of the Japanese wasabi plant. 

The Sjomga is then enveloped in leaves of dark green nori, a rare Japanese seaweed, which has been used for centuries in Asian cuisine. The lightly smoked fillet highlights the iodized and subtle taste of this seaweed, which has got a very high vitamin B content. The combination of the marinade and the seaweed imparts a spicy, slightly iodised taste to the salmon.
